Ducks Unlimited's own recipe library was confirmed via WebSearch to include a duck-tacos preparation using shredded/braised meat; this project wrote its own simplified version built on its own braised-legs recipe rather than copying that specific recipe. Not tested by this project.

Ingredients

  • Cooked, shredded duck or goose leg meat (see this guide's own braised-legs recipe)
  • Small corn or flour tortillas
  • Shredded cabbage or slaw mix
  • Lime wedges
  • Salsa or hot sauce, to taste
  • Fresh cilantro (optional)

Steps

  1. Start with fully cooked, shredded braised duck or goose leg meat (165°F already reached during braising — see this guide's own braised-legs recipe).
  2. Warm the shredded meat in a skillet with a splash of its own braising liquid, or a little oil, until heated through.
  3. Warm tortillas briefly in a dry skillet or directly over a low flame.
  4. Assemble with shredded meat, cabbage/slaw, a squeeze of lime, and salsa or hot sauce to taste.
