Ingredients

  • Cleaned soft-shell crabs
  • Flour or a light dredge
  • Butter or oil
  • Salt and pepper

Steps

  1. Pat cleaned soft crabs dry and season lightly.
  2. Dredge lightly in flour, shaking off excess.
  3. Pan-sear in hot butter or oil, shell-side down first, until golden and cooked through, then flip — a few minutes per side depending on size.
  4. Confirm the body meat reaches 145°F internal temperature before serving.
