Citrus-grilled mackerel

Ingredients

  • 1 1/2 lb mackerel or bluefish fillets, bloodline trimmed
  • Juice of 2 lemons and 1 orange
  • 2 tbsp olive oil
  • 1 tsp coriander, 1/2 tsp red pepper flakes
  • Sliced red onion and herbs to finish

Method

  1. 1Marinate trimmed fillets in citrus, oil, and spices for 20 minutes — no longer.
  2. 2Preheat the grill to high and oil the grates well.
  3. 3Grill skin side down 4–5 minutes until the skin releases cleanly.
  4. 4Flip once and finish 3–4 minutes.
  5. 5Confirm 145°F, then top with onion and herbs.
